Microsoft have a nasty habit of setting OneDrive as the default location for your "documents" folder, when ETS2 expects it to be on the C: drive at this address: C:\Users\*your username*\Documents\Euro Truck Simulator 2. If you look in there, you should find the ".bak" files that backup your profile. It might be a good idea to use the Steam
